Banana Bread!
This is an extremely simple bread to make. It’s very healthy and perfect to throw together if you have some bananas going bad in your fruit bin. As always you can make it better and healthier by using brown ingredients instead of white ones. Here’s the recipe with as much brown as possible! And as a tribute to my good friend Andrew Patton: Bananaphone!
Preheat oven to 350 Degrees and grease a loaf pan
Blend together-
2/3 C. Brown Sugar
1/4 C. Melted Butter (or margarine, but I always feel butter is better for you, more natural)
2 Eggs
1 C. Bananas (2, 3 or even 4 over-ripe bananas, the more the merrier)
1/4 C. Water
1 Tsp. Vanilla
Now add in your dry ingredients, right in the same blender
1 C. Oat Flour (you can pulverize some quick-cook oats in a food processor if you don’t have oat flour lying around)
2/3 C. Unbleached Flour
1 Tsp. Baking Soda
1 T. Cinnamon
1/2 Tsp. Salt
1/4 Tsp. Baking Powder
Blend together until well mixed, it should have a cake batter consistency
If you want to, add in 1 C. of chopped walnuts or mini chocolate chips and stir them in with a spoon.
Now simply pour it into your greased loaf pan and bake at 350 degrees for 1 hour.
It’s especially good if you slice it up and toast it with some peanut butter and honey!
